I can’t believe that it’s already September! I’m sad that Summer is almost over, but like any #basic girl knows, Fall is great because it’s time for pumpkin everything!
Growing up, every Thanksgiving I would make Pumpkin Pudding for my family. It was my signature dish! Unfortunately, it has some ingredients that I steer clear of now, namely dairy and the refined sugar in the pudding mix. So here’s the Fall treat I came up with as a replacement: the Pumpkin Chia Bowl!
This recipe is a mixture between a smoothie bowl and chia pudding (two of my favorite things!) It’s also a super easy recipe. Customize however you’d like as I generally don’t measure out the ingredients.
- 1 cup almond milk (optional: vanilla flavored)
- 1/2 cup canned pumpkin
- 1-2 tbsp vanilla protein powder (based on preference)
- 1-2 tbsp chia seeds
- Dash of cinnamon
Mix almond milk, pumpkin, and protein powder in the blender for a few seconds. I find it tastes best when it’s a bit thicker. Pour into a bowl, add chia seeds and sprinkle in cinnamon on top. Let it sit for a few minutes for the chia seeds to form a gel-like consistency and then dig in!
